Poor Knights "Tyrolean style"

Ingredients

Servings: 3
  • 2 Tomatoes
  • 2 Spring onions
  • 2 Eggs
  • 1-2 TABLESPOONS Oil
  • 3 large slices of farmhouse bread
  • 3 discs (approx. 60 g) South Tyrolean bacon
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 75–100 g grated cheese (e.g. pizza cheese)
  • baking paper

Directions

    Preheat oven (electric cooker: 225 °C/circulating air: 200 °C/gas: level 4). Clean and wash vegetables. Cut tomatoes into slices, spring onions into rings.

    Beat the eggs. Heat oil in a large frying pan. Cover each loaf with 1 slice of ham. Turn in the eggs and fry with the slice of ham facing down for about 1 minute, then turn and continue frying for about 1 minute.

    With the slice of ham facing upwards, place it on a baking tray lined with baking paper. Place the vegetables on top. Season with salt and pepper. Sprinkle cheese over it. Bake in a hot oven for about 5 minutes.
