Ingredients

  • 300 g Plums or damsons
  • 100 g mixed nuts (e.g. almonds, walnuts, peanuts, hazelnuts)
  • 200 g Dried fruit (e.g. apples, apricots, figs, mango, pineapple)
  • 125 ml Milk
  • 200 g Flour
  • 250 g Wholemeal wheat flour
  • 1 TEASPOON Sugar
  • 1 TEASPOON Salt
  • 1 bag of dry yeast
  • 1 TEASPOON Cookie spice
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Cut plums in half, stone them and chop them into small pieces. Roast the nuts in a pan without fat, remove. Chop the dried fruits and nuts finely or chop them roughly. Warm milk and 125 ml water lukewarm. Mix flour, sugar, salt and yeast in a bowl. Add milk and knead with the dough hooks of the hand mixer to a smooth dough.

    Add cookie spice, fruits, nuts and plums and knead first with the dough hooks, then with floured hands on a floured work surface. Cut the dough in half and form into elongated narrow loaves. Put the breads on a baking tray covered with baking paper and let them rise for 45-60 minutes (the dough should have risen clearly). Bake the breads in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 25-35 minutes. Let the bread cool down on a kitchen grid and cut into 10 slices
