Ingredients

Servings: 15
  • 400 ml Milk
  • 1/2 cube (21 g) fresh yeast
  • 400 g Wheat flour (Type 405)
  • 200 g Rye flour (Type 1150)
  • 1 1/2 TABLESPOONS Salt
  • 2 TABLESPOONS Honey
  • 150 g Fruit muesli (with separated apricots, separated figs, oat flakes, hazelnut kernels etc.)
  • 7-10 Tbsp Flour

Directions

    Warm the milk lukewarm. Dissolve yeast in it. Mix flour and salt and add to the yeast milk. Add honey and knead quickly with the dough hooks of the hand mixer to a soft dough. Put the dough into a bowl at least twice as big as the dough and, covered with a clean tea towel, leave to rise in a warm place for about 1 hour.

    Knead the muesli mixture into the well-risen soft dough. Put it back into the bowl, cover it and let it rise for about 1 hour in a warm place. Shape the dough into rolls in different shapes on a floured work surface. Place on 1-2 baking trays lined with baking paper. Cover the buns and leave to rise in a warm place for 30-45 minutes. Sprinkle the rolls lightly with flour and bake them sheet by sheet in a preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: see manufacturer) for 20-25 minutes. Remove and let cool on a cake rack
