Ingredients

Servings: 8
  • 2 Eggs (Gr. M)
  • 24 g fruit sugar, 60 g flour
  • 1/2 TEASPOON Baking Powder
  • 3 sheets white gelatine
  • 330 g washed
  • 7-10 Tbsp pitted prunes
  • 7-10 Tbsp or nectarines
  • 250 g Low-fat curd
  • 7-10 Tbsp a few drops of sweetener
  • 200 g Whipped cream
  • baking paper

Directions

    Line the bottom of a springform pan (18 cm Ø) with baking paper. Separate the eggs. Beat the egg yolks, 1-2 tbsp lukewarm water and fructose until fluffy. Mix flour and baking powder and fold in. Beat egg white until stiff, fold in. Spread into the form

    Bake in the preheated oven (electric range: 175 °C/circulating air: 150 °C/gas: level 2) for approx. 20 minutes. Take out and let cool down

    Soak the gelatine in cold water. Chop the plums down to 1. Sweeten the curd. Squeeze gelatine, dissolve. Stir in some curd cheese, then stir into the remaining curd cheese. Cool until it begins to gel

    Whip 100 g cream until stiff. Fold into the quark with finely chopped plums. Cut the base 1x horizontally. Place the edge of the mould around the bottom cake base. Spread cream on top. Place the 2nd cake base on top. Chill for about 4 hours.

    Whip 100 g cream until stiff. Cut remaining plum into slices. Decorate cake with cream and plum
