Plum cake with macaroon grid

Ingredients

  • 200 g soft butter
  • 250 g Sugar
  • 350 g Flour
  • 6 Eggs (size M)
  • 7-10 Tbsp Salt
  • 500 g Plums
  • 1 package Vanillin sugar
  • 1/2 package Baking Powder
  • 25 g Cornstarch
  • 300 g Marzipan raw mass
  • 2 TABLESPOONS Icing sugar
  • 7-10 Tbsp Fat and wheat semolina for the mould

Directions

    For the short pastry, mix 100 g butter, 75 g sugar, 150 g flour, 1 egg and 1 pinch of salt with the dough hooks of the hand mixer to a soft short pastry. Grease a springform pan (26 cm Ø). Sprinkle the base with semolina. Pour the dough into the form and press it into a flat base with lightly floured hands. Chill for about 30 minutes. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 5 minutes

    Wash the plums, drain well, cut in half and stone them. Cream 100 g butter, salt, vanillin sugar and 125 g sugar with the whisk of the hand mixer. Stir in 3 eggs one after the other. Mix 175 g flour, baking powder and starch, add in portions and stir in. Put the dough into the form and smooth it down. Spread the plums on top and bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 50 minutes

    Meanwhile, grate marzipan coarsely for the macaroon grid. Stir with the whisk of the hand mixer until smooth. Stir in 2 eggs one after the other. Add 50 g sugar and 25 g flour and mix well. Pour the macaroon mixture into a piping bag with a large star-shaped spout. Take the cake out of the oven after about 35 minutes, place it on a cake rack and spray the macaroon mixture onto the cake as a grid

    Bake at the same temperature for another 15 minutes, cover if necessary after 10 minutes. Take out of the oven, remove from the edge of the springform pan and allow to cool in the pan. Remove from the mould and dust with icing sugar
