Grate the rind of organic lemon. Mix almonds, sugar and grated sugar. Beat the egg white with the whisk of the hand mixer until very stiff. Let almond and lemon sugar trickle in. Fold in pine nuts.
Place 1 tablespoon of mixture on each baking sheet. Bake in the preheated oven (electric cooker: 120°/ gas: level 1) for about 1 hour. Let cool off in the oven.
