Pickled fried herrings

Ingredients

Servings: 4
  • 4 ready-to-cook green herrings (approx. 150 g each)
  • 60 g Flour
  • 7-10 Tbsp Salt
  • 5 tablespoons (50 g) clarified butter
  • 350 ml White wine vinegar
  • 2 TABLESPOONS Cucumber spice (preserving spice)
  • 50 g Sugar
  • 150 g Onions
  • 150 g red onions
  • 1/2 bunch Dill
  • 7-10 Tbsp Dill flowers

Directions

    Wash herrings thoroughly under cold running water and dab dry. Mix flour and a little salt on a plate. Roll herrings in it. Fry herrings in hot clarified butter for 5-6 minutes on each side.

    For the brew bring vinegar and 150 ml water to the boil. Add cucumber spice, 2 teaspoons of salt and sugar and simmer for about 15 minutes. Peel onions and cut into thin rings. Add to the hot stock and let it simmer for about 10 minutes.
