Penne with salsicce bolognese

Ingredients

Servings: 4
  • 1 Onion
  • 1 Garlic clove
  • 800 g Salsicce
  • 2 TABLESPOONS Olive oil
  • 2 TABLESPOONS Tomato paste
  • 1 Bay leaf
  • 150 ml dry red wine
  • 1 can(s) (850 ml) Tomatoes
  • 250 ml clear soup
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 pinch Sugar
  • 400 g Penne noodles
  • 1 collar flat leaf parsley
  • 1/2 Pot of basil
  • 50 g freshly grated Parmesan cheese

Directions

    Peel onion and garlic. Chop the onion finely, chop the garlic. Squeeze the sausage meat out of the sausage skin. Heat oil in a large pan and fry salsicce until crumbly. Take out and drain the fat that has formed. Add onions and garlic to the pan and fry briefly.

    Add tomato paste and sauté briefly. Add salsicce and bay leaf, deglaze with wine. Let it boil down at high heat. Add tomatoes and stock, chop with a spatula. Season with a little salt, pepper and sugar, simmer for about 30 minutes

    Prepare the pasta in boiling salted water according to the instructions on the packet. Wash herbs and shake dry. Set aside some basil for garnishing. Cut the remaining herbs into fine strips and add them to the sauce about 5 minutes before the end of the cooking time, except for something to sprinkle on top. Season to taste with salt and pepper.

    Put the pasta in a sieve, drain and mix with the sauce. Arrange penne on plates. Sprinkle with parmesan and remaining herbs. Garnish with basil
