Ingredients

Servings: 4
  • 400 g Penne-Rigate
  • 7-10 Tbsp Salt
  • 4 Egg yolk (size M)
  • 2 TABLESPOONS Whipped cream
  • 6 TABLESPOONS grated parmesan cheese
  • 125 g Pancetta
  • 1/2 bunch Parsley
  • 1 TABLESPOON Olive oil
  • 7-10 Tbsp Pepper

Directions

    Prepare the pasta in boiling salted water according to the instructions on the packet. Mix egg yolks, cream and 2 tablespoons of cheese. Cut Pancetta into small cubes. Wash parsley, shake dry and pluck leaves from the stalks.

    Finely chop the parsley.

    Heat the oil in a frying pan and fry the pancetta. Add parsley. Mix the contents of the pan with the pasta. Pour the egg mixture over the pasta and season with salt and pepper. Sprinkle with the rest of the grated Parmesan.
