Peel and halve the pears and cut out the core. Cut into the surface of the pears. Caramelise the sugar in a pot. Add orange juice and bring to the boil while stirring. Let the pear halves steep in it for about 10 minutes, take them out and let them cool down. Place the puff pastry slices next to each other and let them thaw.

Place the edges of the pastry side by side on the pastry sheet. Place the pear halves in the cut out "pears". Whisk egg yolk and milk. Spread the edges of the dough with it.
