Pasta rösti with tomato chutney

Ingredients

Servings: 4
  • 250 g Croissant noodles
  • 7-10 Tbsp Salt
  • 300 g Tomatoes
  • 1 Onion
  • 1 TABLESPOON Olive oil
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS black olive rings
  • 3 Stem(s) Basil
  • 1 pickled anchovy fillet
  • 2 Eggs
  • 2-3 TABLESPOONS Flour
  • 2-3 TABLESPOONS Oil
  • 50 g sliced parmesan cheese

Directions

    Cook the pasta in boiling salted water according to the instructions on the packet and drain. In the meantime clean, wash and cut the tomatoes into small cubes. Peel and finely dice the onion. Warm up the olive oil. Sauté onion in it. Add the tomatoes. Season with salt and pepper, boil down for 3 minutes at high heat.

    Add olive rings, finely chop basil and anchovy fillets, stir in, season again. Whisk eggs and flour. Fold in the pasta. Season with salt and pepper. Heat the oil in portions in a frying pan. Fry the noodles in it in portions to make Rösti (approx. 10 cm Ø). Sprinkle with the chutney and parmesan
