Spread slices of bread with butter. Peel and slice the eggs. Halve and roll up the herring fillets. Cover 8 slices of bread with egg and matie rolls. Garnish with remoulade, gherkin and chives.
For the salmon bites, cover 8 slices of bread with smoked salmon and garnish with horseradish, halved lemon slices, caviar and dill. For the trout bites, wash the salad thoroughly. Season vinegar with salt and pepper and add oil.
Marinate the salad briefly in it. Cut trout fillets into bite-sized pieces. Cover 8 slices of bread with salad and trout filets. Whip the cream until stiff and use a piping bag with a star-shaped spout to squirt small dots onto the morsels.
Garnish with cranberries. For the scampi bites, wash the salad, pull briefly through the remaining marinade and cover the remaining slices of bread with it. Spread the scampi on top. Peel and finely chop the garlic or press it through the garlic press.
Mix lemon juice, garlic and mayonnaise and fill into a piping bag with star spout. Spray dots onto the canapés and serve garnished with lime wedges.
