Pancake tower with fruit salad

Ingredients

  • 5 TABLESPOONS Butter or margarine
  • 250 g Flour
  • 1 TEASPOON Baking Powder
  • 100 g Sugar
  • 2 packages Vanillin sugar
  • 1 pinch Salt
  • 2 Eggs (size M)
  • 400 ml Milk
  • 2 TABLESPOONS clarified butter
  • 250 g Whole Milk Couverture Chips
  • 2 Bananas (approx. 150 g each)
  • 2 Apples (about 200 g each)
  • 2 Oranges (about 200 g each)
  • 2 Kiwis (approx. 125 g each)
  • 5 TABLESPOONS Orange juice
  • 2 TABLESPOONS Honey

Directions

    Melt the fat. Mix flour, baking powder, sugar, vanillin sugar and salt. Whisk the eggs with a whisk. Stir in milk and liquid fat. Gradually stir in the flour mixture by the spoonful.

    Heat some clarified butter in a coated pan (approx. 18 cm Ø) and add 1/8 of the dough. Fry the pancakes at medium heat for about 3 minutes on each side until golden brown. Place the finished pancakes on top of each other on a plate and sprinkle each with chocolate chips, except for the last one. Keep warm in the preheated oven (electric cooker: approx. 50 °C). Bake the rest of the dough in the same way, adding some clarified butter in portions. Peel bananas and cut into pieces. Wash apples, dab dry, cut into quarters, remove core and cut fruit flesh into pieces. Peel oranges and kiwis and cut the pulp into pieces. Mix prepared fruit with orange juice and honey in a bowl. Season to taste with more honey if desired.
