Pan-fried fillet with sesame vegetables

Ingredients

Servings: 4
  • 500 g Broccoli
  • 1 red pepper
  • 100 g Sweet peas
  • 1 red chilli pepper
  • 500 g Pork tenderloin
  • 1 TABLESPOON Sesame
  • 2 TABLESPOONS Oil (e.g. rape seed oil)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-8 TABLESPOONS Soy sauce
  • 1 TEASPOON Cornstarch
  • 4-5 Stem(s) Coriander or parsley

Directions

    Clean and wash the broccoli and cut it into florets. Clean, wash and cut the peppers into strips. Wash, clean and halve sugar snap peas. Clean the chillies, cut lengthwise, remove seeds, wash and cut finely.

    Dab meat dry and cut into strips.

    Roast sesame seeds in a hot wok or a large pan (with lid) without fat, remove. Heat the oil in the wok. Sauté the meat in it in portions, turning for about 2 minutes. Season with salt and pepper and remove.

    Fry broccoli in hot frying fat for 3-4 minutes, stirring continuously. Fry the peppers and sugar snap peas briefly.

    Add soy sauce and 7-8 tablespoons of water. Bring to the boil, cover and simmer for 2-3 minutes. Stir starch and 1-2 tbsp. water until smooth. Thicken the sauce with it. Add meat and heat. Season to taste with pepper and salt if necessary.

    Wash the coriander, shake dry and pluck off the leaves. Sprinkle with sesame seeds.
