Wash quinoa with hot water to remove the bitter substances from the outer layers. Simmer for about 20 minutes in 2 1/2 times the amount of boiling water. Clean, wash and dice the peppers.
Onions peel and cut into slices. Clean the rocket, wash and shake dry. For the sauce whisk lemon juice, honey, salt and pepper. Stir in oil drop by drop. Mix quinoa and sauce and fold in remaining salad ingredients.
Arrange in a bowl. Serve with a coriander yoghurt dip.
