Orecchiette mit Broccoli und Oliven

Ingredients

Servings: 4
  • 400 g Broccoli
  • 250 g Pasta (e.g. orecchiette)
  • 7-10 Tbsp Salt
  • 2 Onions
  • 2–3 Garlic cloves
  • 200 g smoked streaky bacon (lean)
  • 100 g black olives
  • 6 TABLESPOONS Olive oil
  • 200 ml dry white wine
  • 7-10 Tbsp Pepper
  • 50 g freshly grated Parmesan cheese

Directions

    Clean, wash and cut broccoli into small florets. Clean, wash and chop the stalk as well. Cook the pasta in boiling salted water according to the instructions on the packet. Put broccoli in boiling salted water and cook for 4-6 minutes.

    Pour into a sieve and drain well. Meanwhile peel onions and garlic and chop finely. Dice the bacon. Stone the olives if necessary. Leave the bacon in a pan without fat until crispy.

    Pour the noodles into a sieve, quench briefly and drain well. Add olive oil to the pan. Add onions and garlic and fry. Deglaze with wine, bring to the boil. Add olives, pasta and broccoli.

    Heat, season to taste with salt and pepper. Arrange on plates sprinkled with parmesan.
