Orange semolina with grapes and sesame brittle

Ingredients

  • 125 g Sugar
  • 20 g hulled sesame seed
  • 150 g blue seedless grapes
  • 1 TABLESPOON liquid honey
  • 1 TABLESPOON Lemon juice
  • 400 ml Orange juice
  • 1 package Vanillin sugar
  • 75 g Durum wheat semolina
  • 250 g Greek cream yoghurt
  • baking paper

Directions

    Caramelise 75 g sugar in a small pan over a low to medium heat until golden. Add sesame seeds, mix in and immediately pour onto a piece of baking paper. Let it cool down.

    Wash and drain the grapes, pluck them from the panicles and cut them in half. Mix honey and lemon juice. Mix in the grapes.

    Bring orange juice, vanillin sugar and 50 g sugar to the boil in a pot. Stir in the semolina. Bring to the boil briefly while stirring, allow to swell at low heat for about 1 minute. Stir several times. Remove from the stove and let it cool down a little.

    Fold in yoghurt in portions. Pour semolina into 4 dessert glasses. Spread grapes on top. Break sesame brittle roughly. Decorate desserts with sesame brittle.
