Cut the ham into cubes, except for something to garnish. Whisk eggs and ham. Season with salt and pepper. Heat 1 tablespoon of oil in 2 pans (approx. 24 cm Ø). Divide the egg mixture between the 2 pans.
Leave to stand for about 10 minutes at medium heat. ##Cut the gherkins lengthwise in half. Arrange omelettes on plates and garnish with ham and gherkins. Sprinkle with coarse pepper.
