Ingredients

  • 1 tin(s) (400 g each) sweetened condensed milk
  • 2 Eggs (Gr. M)
  • 200 g Flour
  • 1 tsp, heaped Baking Powder
  • 800 g Double cream cheese
  • 100 g Icing sugar
  • 1 Organic Lemon
  • 500 g Whipped cream
  • 1 jar (à 270 g) Heddleberry fruit spread (without seeds)

Directions

    Preheat the oven for the floors (electric cooker: 180 °C/circulating air: 160 °C/gas: see manufacturer). Draw 2 circles (approx. 20 cm Ø each) on five sheets of baking paper. For the dough, mix condensed milk and eggs with the whisk of the mixer. Mix flour with baking powder and stir into the egg mixture. Turn over a sheet of baking paper and lay it on a baking tray. Spread approx. 2 tbsp. of dough in each of the circles in a thin layer. Bake in a hot oven for about 8 minutes until golden brown. Take out and let cool down. Meanwhile spread the rest of the dough in the same way, bake and let it cool down.

    For the cream, mix cream cheese, icing sugar and lemon zest with the whisks of the mixer until creamy. Whip the cream until stiff and fold into the cream cheese cream in 2-3 portions. About 1⁄3 Cover the cream and put it in a cool place.

    Stir fruit spread until smooth. Spread approx. 2 tbsp. cream on each of the 9 cake bases and spread approx. 1 tbsp. fruit spread on top. Place the cake bases on top of each other. Cover with the last cake base. Chill the cake for about 1 hour.

    Stir the cold cream cheese mixture briefly. Remove 3 tablespoons of cream and mix with the rest of the fruit spread. Spread the rest of the white cream all around the cake. Spread the pink cream on the lower third of the cake. Refrigerate again for about 1 hour.
