Ingredients

  • 250 g Flour
  • 260 g Sugar
  • 3 packages Vanillin sugar
  • 1 egg (size M)
  • 375 g Butter
  • 75 g Amarettini
  • 200 g Cashew nuts
  • 100 g Macadamia nut kernels
  • 150 g redcurrant jelly
  • 100 g crushed almonds
  • 150 g Dark chocolate coating
  • 20 g Coconut oil
  • 2 TABLESPOONS Hazelnut brittle for sprinkling
  • 7-10 Tbsp Fat and flour
  • baking paper

Directions

    Knead the flour, 60 g sugar, 1 packet of vanilla sugar, egg and 125 g butter in flakes with the dough hooks of the hand mixer to a smooth dough. Cover and chill for about 30 minutes. Coarsely chop the amarettini, cashew and macadamia nut kernels. Grease the fat pan of the oven and dust with flour. Flatten or roll out the dough evenly with your hands in the pan.

    Stir the jelly until smooth, place on top and spread. Bring 250 g butter, 200 g sugar, 2 packets of vanillin sugar and 4 tablespoons of water to the boil. Leave to cool for about 10 minutes. Add chopped nuts, amarettini and almonds. Spread everything evenly on the dough. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 25-35 minutes on the bottom shelf until golden brown. Remove from the oven and allow to cool on a cake rack for about 15 minutes. Cut the cake into about 40 triangles. Let them cool down. Coarsely chop the chocolate coating, melt with coconut oil on a warm water bath.

Remove from the oven and allow to cool on a cake rack for about 15 minutes. Cut the cake into about 40 triangles. Let them cool down. Coarsely chop the chocolate coating, melt with coconut oil on a warm water bath. Dip one side of each nut corner into the chocolate coating, drain and place on baking paper. Sprinkle with brittle and let dry
