Cook the pasta in plenty of boiling salted water for about 10 minutes. In the meantime, clean and wash spring onions and cut them into rings and wash them. Peel, wash and cut mushrooms into strips. Fry mushrooms and spring onions in hot oil for about 5 minutes. Add cream and lime juice. Bring to the boil and stir in the sauce thickener. Season sauce with salt, pepper and sugar. Fold in salami. Drain noodles and chill cold. Arrange the sauce on a plate and garnish with lime wedges and lemon balm leaves as desired.
