Noodle spinach nests au gratin with egg

Ingredients

Servings: 4
  • 400 g Noodles (e.g. linguine)
  • 7-10 Tbsp Salt
  • 400 g young spinach
  • 1 small onion
  • 1 Garlic clove
  • 2 TABLESPOONS Oil
  • 200 g Double cream cream cheese
  • 100-150 ml Milk
  • 150 ml Vegetable broth
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp grated nutmeg
  • 4 Eggs (size M)
  • 7-10 Tbsp Grease

Directions

    Prepare the pasta in boiling salted water according to the instructions on the packet. Wash spinach and shake dry. Peel and finely chop the onion. Peel garlic and chop finely

    Heat the oil in a wide saucepan. Fry the onion and garlic for 2-3 minutes, then add the spinach and fry until it collapses. Add cream cheese, milk and stock and simmer for about 2 minutes. Season to taste with salt, pepper and nutmeg

    Drain the pasta. Mix about half of the spinach sauce with the noodles. Pour the noodles into greased ovenproof dishes. Press a depression in the middle. Slide 1 egg into each well. Bake noodle nests in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for 15-20 minutes until the egg is cooked

    Take nests out of the oven. Spread the rest of the sauce on the pasta and serve immediately
