Noodle salad with meatballs

Ingredients

  • 200 g Noodles (e.g. penne)
  • 7-10 Tbsp Salt
  • 1 small onion
  • 1 spearmint stem
  • 300 g mixed minced meat
  • 1 Egg Yolk
  • 1 heaped tablespoon breadcrumbs
  • 7-10 Tbsp Pepper
  • 1-2 TABLESPOONS Oil
  • 100 g dried tomatoes in oil (from the jar)
  • 1 Head romaine lettuce
  • 50 g Parmesan cheese
  • 1 Garlic clove
  • 3 TABLESPOONS mayonnaise
  • 1-2 TEASPOONS medium hot mustard
  • 4-6 Tbsp Wine vinegar
  • 2 discs Toast
  • 7-10 Tbsp Tomato wedges and mint

Directions

    Cook the pasta in plenty of salted water for about 10 minutes. In the meantime peel and finely dice the onion. Wash and chop the mint leaves. Knead minced meat, egg yolk, breadcrumbs, onion and mint. Season to taste with salt and pepper.

    Form into small balls with wet hands. Fry in hot oil all around for about 4 minutes. Drain the noodles and let them drain. Cut dried tomatoes into fine strips. Clean, wash and cut the romaine lettuce into strips. Slice Parmesan finely. Peel garlic, press through a garlic press. Mix with mayonnaise, mustard and vinegar. Season with salt and pepper. Carefully mix prepared salad ingredients and sauce.
