##Pine nuts## roast in a pan without fat, take them out. Drain ##tomatoes## and dice them. Wash ##basil##, shake dry and cut the leaves into thin strips.
Coarsely chop the pine nuts.
For the basil cream mix cream cheese and mascarpone. Mix basil, pine nuts and tomatoes and stir in, except for 4 tsp. Season to taste with salt and pepper. Pour into a piping bag with a large perforated spout or a freezer bag.
Drain the mozzarella and cut into 12 slices. If necessary, cut a corner off the freezer bag. Spray the cream between 3 slices of mozzarella to create little towers.
Arrange the mozzarella towers with the remaining pine nut mixture. Ciabatta goes well with this.
