Wash the broccoli florets and cook in boiling salted water for 6-8 minutes until soft. Drain, rinse with cold water and let it cool down. Select baby spinach, wash and drain.
Wash lemon balm, shake dry and pluck off leaves. 1⁄2 Peel and chop the kiwi. 1⁄2 Remove the avocado from its skin and chop finely. Place all ingredients with 1⁄2 tbsp. ground almonds, 1 tbsp. lemon juice and 150 ml apple juice in a tall mixing bowl.
Finely puree with a hand blender or in a blender jug. Pour into a glass and serve immediately.
