Mixed cake with white chocolate ganache, peaches and pistachios

Ingredients

  • 250 g soft butter
  • 200 g Sugar
  • 3 Eggs (size M)
  • 400 g Greek cream yoghurt
  • 300 g Flour
  • 5 g Baking Powder
  • 1 package Vanillin sugar
  • 4 Peach halves (tin)
  • 200 g white chocolate
  • 200 g Double cream cream cheese
  • 3 TABLESPOONS Pistachio kernels
  • 7-10 Tbsp Fat and flour

Directions

    Mix butter and sugar and whisk until creamy. Beat the eggs and 200 g yoghurt into the mixture one after the other. Mix flour, baking powder and vanillin sugar and stir into the mixture in portions.

    Drain the peaches and dice them. Grate 50 g chocolate. Fold the peaches and grated chocolate into the dough. Grease a springform pan (22 cm Ø) and dust with flour. Fill the dough into the form and smooth it down.

    Bake in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for approx. 1 hour. Remove and let cool on a cake rack.

    Chop 150 g chocolate and melt over a warm water bath. Beat 200 g yoghurt and cream cheese until creamy with the whisk of the hand mixer. Stir in the melted chocolate in portions.

    Remove the cake from the springform pan and spread the cream on the cake. Coarsely chop the pistachios and sprinkle the cream over them.
