Minced pancakes in tomato sauce

Ingredients

  • 3 Eggs (size M)
  • 200 ml Milk
  • 7-10 Tbsp Salt
  • 250 g Flour
  • 2 Onions
  • 2 Garlic cloves
  • 4 TABLESPOONS Olive oil
  • 1 package (500 g) chunky tomatoes
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 1/2 TEASPOON dried oregano
  • 600 g mixed minced meat
  • 3 TABLESPOONS Tomato paste
  • 40 g Butter or margarine
  • 100 g Gruyère cheese
  • 1/2 bunch Parsley

Directions

    For the pancake batter, mix eggs, milk, 1/8 litre water and 1 pinch of salt. Add flour and mix to a smooth dough. Let the dough swell for about 30 minutes. Peel onions and garlic and dice finely.

    Fry half of the onion cubes in 2 tablespoons of hot oil until transparent. Add the tomato pieces and bring to the boil. Season with salt, pepper, sugar and oregano and simmer for about 10 minutes. Fry the remaining onion and garlic in the remaining hot oil.

    Add mince and fry. Stir in tomato paste and season with salt and pepper. Heat some fat in a small pan. Add dough in portions and bake 6-8 golden yellow pancakes.

    Spread the mince on the pancake and roll it up. Pour the sauce into an ovenproof dish and place the pancake rolls on top. Grate the cheese and sprinkle over the pancakes. Bake in a preheated oven (electric cooker: 200 °C/ gas: level 3) for 20-25 minutes.

    Wash, dry and chop the parsley. Sprinkle over the minced pancakes.
