Blueberry pancakes

Ingredients

Servings: 4
  • 250 g Flour
  • 1 TEASPOON Baking Powder
  • 3 Eggs (size M)
  • 3/8 l Milk
  • 1 package Vanillin sugar
  • 500 g Blueberries
  • 4 TABLESPOONS Butter or margarine
  • 1-2 TABLESPOONS Icing sugar
  • 125 g Maple syrup

Directions

    Mix flour and baking powder. Mix eggs, milk, flour and vanillin sugar to a smooth dough. Leave to swell for about 30 minutes. Sort blueberries, wash and drain.

    Heat some fat in a pan and pour in about 1/8 of the dough. Sprinkle 1/8 of the blueberries on top. Fry the pancakes until golden brown while turning. Slide onto a large plate, dust with icing sugar and keep warm.

    From the remaining dough, bake 7 more pancakes in the same way. Place all of them on the plate one on top of the other. Dust with icing sugar and serve with maple syrup.
