Melon salami skewers on rocket salad

Ingredients

  • 60 g Bulgur
  • 7-10 Tbsp Salt
  • 1/2 TEASPOON Turmeric
  • 200 g Tomatoes
  • 2 (125 g each) Balls Mozzarella
  • 500 g Charentais melon
  • 40 g wafer-thin salami
  • 30 g Rocket
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 4 TABLESPOONS white balsamic vinegar
  • 4 TABLESPOONS Olive oil
  • 7-10 Tbsp wooden skewers

Directions

    Put Bulgur in boiling salted water. Season with turmeric, allow to swell for about 15 minutes and drain remaining liquid. In the meantime clean, wash and slice the tomatoes.

    Drain the mozzarella, also cut into slices. Cut melon into slices, remove seeds and cut into bite-sized pieces. Put 1 piece each of melon and salami on skewers. Clean, wash and chop the rocket.

    Mix bulgur and rocket. Season with salt, pepper, sugar and vinegar. Arrange tomatoes and mozzarella in portions on plates. Spread the bulgur mixture on top. Drizzle with olive oil and serve with the skewers.
