Meatloaf on paprika-onion-vegetables

Ingredients

  • 1 Bread rolls from the previous day
  • 100 g streaky smoked bacon
  • 2 Onions
  • 1 collar Dill, parsley and basil
  • 750 g Minced beef
  • 2 Eggs
  • 7-10 Tbsp Salt
  • 7-10 Tbsp colourful pepper
  • 200 g Mozzarella cheese
  • 2 TABLESPOONS Oil
  • 4 red peppers
  • 7-10 Tbsp Salt
  • 2 large onions
  • 1 Garlic clove
  • 4 TABLESPOONS Olive oil
  • 7-10 Tbsp white pepper

Directions

    Soak rolls in cold water. Dice bacon and fry until crispy. Peel and finely dice onions. Wash the herbs, keep some basil for garnishing and chop finely.

    Knead the minced meat, squeezed bread roll, bacon cubes, onions, herbs and eggs. Season with salt and pepper. Roughly dice cheese. Form a loaf from the meat dough. Press a hollow in the middle and put the cheese in it.

    Press the meat dough over it and form it again. Coat a baking tray with some oil. Place meatloaf on top, brush with the remaining oil and sprinkle with coloured pepper. Bake in the preheated oven (electric cooker: 200 °C/ gas: level 3) for about 45 minutes.

    In the meantime clean, halve and wash the peppers. Cook in plenty of boiling salted water for 10 minutes. Take out, rinse cold and peel the skin. Peel the onions. Chop paprika and onions roughly.

    Peel garlic, chop finely and mix with oil. Season with salt and pepper. Mix in paprika and onions. Cut meatloaf into slices, arrange on the vegetables and garnish with basil leaves.
