Meatballs in herb cream sauce

Ingredients

  • 1 Bread roll (from the previous day)
  • 800 g green beans
  • 2 Onions
  • 750 g Potatoes
  • 1 Garlic clove
  • 500 g mixed minced meat
  • 1 TEASPOON medium hot mustard
  • 1 egg (size M)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp freshly ground black pepper
  • 7-10 Tbsp Sweet peppers
  • 2 TABLESPOONS Oil
  • 1/4 collar Chives
  • 2 stem(s) Thyme
  • 50 g Butter or margarine
  • 30 g Flour
  • 400 ml Vegetable broth (instant)
  • 100 g Whipped cream
  • 1 pinch Sugar
  • 200 ml Milk
  • 50 g clotted cream
  • 7-10 Tbsp oil, chives and thyme

Directions

    Soak the buns. Clean, wash and chop the beans. Peel and wash potatoes and cook them in boiling salted water for about 20 minutes. Put beans in boiling salted water and cook for about 15 minutes.

    Onions peel and chop finely. Knead the minced meat, well squeezed roll, half of the onions, mustard and egg with the dough hooks of the hand mixer. Strongly season with salt, pepper and paprika and form into balls.

    Heat oil in a pan, fry meatballs over medium heat for 6-8 minutes while turning. In the meantime, wash the herbs and pat dry. Cut chives into small rolls. Pluck the thyme leaves from the stalks.

    Peel and finely chop the garlic. Melt 30 g fat, fry the rest of the onions and garlic in it until transparent, dust with flour and sauté. Add stock and cream while stirring constantly, bring to the boil.

    Season to taste with salt, pepper and sugar. Stir in the herbs. Remove meatballs from the pan and keep warm. Pour beans into a sieve, drain and add to the sauce. Heat milk and remaining fat.

    Drain the potatoes, mash them with a potato masher and stir in the hot milk. Fold in sour cream. Drizzle mashed potatoes with oil as desired, arrange meatballs and beans in sauce on plates.

    Serve garnished with chives and thyme.
