Meatball with thyme, pine nuts and tomatoes

Ingredients

Servings: 4
  • 2 discs Toast
  • 2 Onions
  • 1 Garlic clove
  • 2 Tomatoes
  • 50 g Pine nuts
  • 1/2 bunch Thyme
  • 500 g mixed minced meat
  • 1 egg (size M)
  • 1 TEASPOON Tomato paste
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Oil

Directions

    Soak toast in cold water. Peel onions and garlic and dice finely. Wash, quarter, seed and dice the tomatoes. Coarsely chop pine nuts. Wash thyme, pluck leaves from the coarse stalks and chop.

    Squeeze the toasted bread well and knead with minced meat, onions, garlic, egg, diced tomatoes, pine nuts, thyme and tomato paste. Season with salt and pepper. Form 8 meatballs with your hands.

    Heat the oil in a frying pan. Fry the meatballs on both sides for approx. 6 minutes at medium heat.
