Matjes with potato sauce

Ingredients

  • 250 g Potatoes
  • 7-10 Tbsp Salt
  • 750 g green beans
  • 1 TEASPOON dried savory
  • 4 medium-sized onions
  • 20 g Butter or margarine
  • 8 Matie's fillets
  • 3 TABLESPOONS White wine vinegar
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp white pepper
  • 7-10 Tbsp Sweet peppers
  • 7-10 Tbsp Tomato and parsley

Directions

    Peel and wash the potatoes and cook them in salted water for about 20 minutes. Clean and wash the beans and cook them with the savory in salted water for about 20 minutes. Peel onions and cut them into fine rings.

    Heat the fat in a pan and fry the onion rings in it until golden brown. Rinse the maties under cold running water and dab dry. Drain the potatoes and press them through a potato press.

    Mix with vinegar, oil, salt and pepper. Drain the beans. Arrange the matie beans, potato sauce and onion rings on plates. Dust with paprika and garnish with tomato and parsley.
