Marinated strawberries with semolina pudding

Ingredients

  • 3 Eggs
  • 750 ml Milk
  • 4 TABLESPOONS Sugar
  • 1-2 TABLESPOONS Lemon juice
  • 100 g Semolina
  • 750 g Strawberries
  • 5 TbspO orange liqueur
  • 2 packages Vanillin sugar
  • 100 g Marzipan raw mass
  • 2 TABLESPOONS Icing sugar
  • 7-10 Tbsp Mint leaves
  • 7-10 Tbsp Cling film

Directions

    Separate eggs. Stir egg yolk and 3 tablespoons of milk until smooth. Bring the remaining milk and 3 tablespoons of sugar to the boil. Stir in semolina and season with lemon juice. Bring to the boil again briefly while stirring.

    Stir in the egg yolk and do not let it boil anymore. Beat the egg whites until stiff, fold in and pour into 4 cold rinsed moulds (approx. 200 ml content). Chill for about 2 hours. In the meantime, wash and clean the strawberries and cut them in half except for 4 berries.

    Marinate with liqueur and vanilla sugar. Knead marzipan and icing sugar and roll between foil to 5 thin slices. Place the remaining strawberries in the middle of each slice, cover with marzipan and cut in half.

    Cut out small leaves from the remaining marzipan disc. Roll everything in remaining sugar. Turn out the semolina from the moulds. Serve with the marinated strawberries. Serve garnished with marzipan strawberries and mint.
