Mango quark ice cream

  • 2 Organic lemons
  • 750 g Edible quark (40 % fat)
  • 200 g Whipped cream
  • 75 g Sugar
  • 1 (approx. 400 g) ripe mango
  • 1 package (50 g; 16 pieces) Waffle cup
  • 7-10 Tbsp Cling film

Directions

    Pre-freeze the cooling element of the ice cream machine according to the instructions for use. Wash the lemons hot, dry them off. Finely grate the peel. Squeeze lemons, measure 100 ml juice.

    Mix quark, cream, sugar, lemon juice and zest. Pour into the switched on ice cream machine and stir for 15-30 minutes (depending on the machine).

    Meanwhile, peel the mango, cut the flesh off the stone and puree it. Rinse an approx. 20 x 20 cm form with cold water and cover it smoothly with foil. Just before the ice cream is ready, put the mango puree into the ice cream machine and let it stir for only a short time so that streaks appear.

    Pour the ice cream mixture into the prepared mould, freeze for at least 2 hours. Remove the ice cream from the freezer approx. 30 minutes before serving, turn over and remove the foil. Cut the ice cream into cubes of about 5 cm.

    Dress in the waffle cups.
