Mandarin curd with cookies

Ingredients

Servings: 6
  • 7 Mandarins (possibly including 1 organic)
  • 1 package (approx. 150 g) Schoko-Cookies
  • 500 g Edible quark (20 %)
  • 2-3 TABLESPOONS Sugar
  • 7-10 Tbsp 1 P. Bourbon vanilla sugar
  • 150–200 g Whipped cream
  • 7-10 Tbsp Chocolate roll or rasp

Directions

    Wash organic mandarin and rub dry or peel a normal mandarin. Cut into 6 slices and possibly halve. Peel the other mandarins so that the white skin is completely removed.

    Cut out the fillets between the parting skins, if necessary dice them roughly.

    Roughly hack cookies. Mix quark, sugar and vanilla sugar. Whip cream until stiff, fold in. Layer quark, cookies and mandarins in 6 glasses. Finish with a dollop of cream. Decorate with mandarin slices and chocolate rolls.
