Mackerel fillet with marinated vegetables

Ingredients

Servings: 4
  • 2 untreated lemons
  • 4 Courgettes (about 150 g each)
  • 2 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1/2 bunch flat leaf parsley
  • 400 g smoked fillet of pepper mackerel
  • 125 g Whipped cream
  • 1 TEASPOON grated horseradish
  • 7-10 Tbsp Salad and flat leaf parsley

Directions

    Wash the lemons and rub them dry. Squeeze juice from 1/2 lemon. Cut the remaining lemons into slices. Clean, wash and slice the zucchini. Heat the oil in a pan and fry the lemons in it for about 1 minute on each side.

    Add the zucchini and fry for about 5 minutes. Season with salt and pepper. Wash parsley, dab dry, pluck leaves from the stems and add to the courgette vegetables shortly before the end of the cooking time. Let the vegetables cool down a little.

    Sprinkle with lemon juice and leave to marinate for about 30 minutes. Cut mackerel fillet into pieces and arrange on salad together with the vegetables as desired. Lightly whip the cream with the whisk of the hand mixer.

    Add horseradish and stir in. Pour creamed horseradish over the fish, sprinkle with pepper and serve garnished with parsley if desired.
