Macaroni with spinach ricotta sauce

Ingredients

  • 500 g Spinach
  • 1 Onion
  • 2 Garlic cloves
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 7-10 Tbsp grated nutmeg
  • 300 g Macaroni Noodles
  • 4 discs Kasseler cold cuts (approx. 20 g each)
  • 350 ml Vegetable broth (instant)
  • 150 g Whipped cream
  • 100 g creamy ricotta cheese
  • 2 TABLESPOONS sauce thickener
  • 2-3 TABLESPOONS Lemon juice
  • 7-10 Tbsp Thyme, coloured pepper, lemon julienne and slices

Directions

    Clean and wash the spinach and drain well in a sieve. Peel onion and garlic and dice very finely. Heat the oil in a large pot. Fry the onion until transparent, add the garlic and fry briefly.

    Add the spinach and let it collapse. Season to taste with salt, pepper and nutmeg. Put macaroni in boiling salted water and cook for about 8 minutes. In the meantime cut the smoked pork loin into strips. Bring stock, cream and ricotta to the boil in a pot.

    Stir in the sauce thickener and bring to the boil again. Add the spinach. Season to taste with salt, pepper and lemon juice. Add the smoked pork loin. Pour macaroni into a sieve, quench and drain briefly.

    Serve macaroni and sauce on plates. Serve garnished with thyme, pepper, lemon julienne and slices.
