Lime turkey schnitzel on braised tomatoes

Ingredients

  • 50 ml Lime juice
  • 150 ml clear grape juice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 8 small turkey escalopes (approx. 75 g each)
  • 2-3 Garlic cloves
  • 800 g Tomatoes
  • 4 TABLESPOONS Olive oil
  • 1 Lime
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Lime julienne and basil

Directions

    Mix lime juice, grape juice, salt and pepper. Wash the meat, dab dry. Place the meat in a flat bowl and pour the marinade over it. Leave to soak overnight. Peel and slice the garlic.

    Wash, clean and halve the tomatoes. Heat the oiven oil in a pan, place the tomatoes with the cut side in the hot oil and braise at medium heat for 15-18 minutes. Add the garlic about 5 minutes before the end of the braising time. Then turn carefully and season with salt and pepper. In the meantime, wash the lime thoroughly and cut into slices. Remove the meat from the marinade and dab dry with kitchen paper. Heat oil in a pan and fry meat for 2-3 minutes on each side. Add the slices of lime shortly before the end of the frying time. Season cutlets with salt and pepper.
