Halve the bacon slices crosswise and wrap the prunes with bacon. Rinse lemon grass and cut in half lengthwise. Put 1 prune on each stalk.
Cut or plane white cabbage into very fine strips. Sprinkle with some salt and mash vigorously with a potato masher.
Heat 2 teaspoons of oil in a coated frying pan. Steam white cabbage for about 5 minutes. Clean, rinse and finely chop the chilli pepper. Peel and grate ginger. Add chilli and ginger to the cabbage and steam.
Season cabbage again with salt.
Heat the rest of the oil and fry the skewers all around. Arrange lemongrass prune skewers on the white cabbage.
