Ingredients

  • 7 Organic lemons
  • 2 packages Vanillin sugar
  • 350 g Sugar
  • 2 Protein

    Rinse lemons with hot water. Finely grate the zest of the lemons and mix with vanillin sugar. Put 800 ml water and sugar into a pot and let it simmer until the sugar is completely dissolved. Add the lemon mixture to the syrup and allow to cool completely.

    Pour syrup through a fine sieve. Halve the lemons and squeeze the juice. Add lemon juice to the syrup. Beat the egg whites until stiff and mix with the syrup. Pour the sorbet mixture into a large mould and place in the freezer for about 5 hours. Stir every 40-60 minutes until it reaches the typical consistency. Serve the sorbet.
