Wash the liver thoroughly, dab dry and chop. Fry in 2 tablespoons of hot oil all around for about 5 minutes. Season with salt and pepper. Wash apple, rub dry, quarter and core. Then cut the apple into pieces. Wash and halve the tomatoes.
Sort the lettuce, wash and pat dry. Remove meat from the pan. Pour on the remaining oil and vinegar, bring to the boil briefly. Season to taste with salt and pepper. Add liver, apple and tomatoes, toss briefly and arrange lukewarm on the lamb's lettuce
