Kohlrabi apple salad

Ingredients

  • 1 Shallot
  • 50 g Walnut kernels
  • 4 TABLESPOONS Cider vinegar
  • 1 heaped Tsp medium hot mustard
  • 1 TABLESPOON liquid honey
  • 4 TABLESPOONS Olive oil
  • 125 g Babyleaf salad mix
  • 600 g Kohlrabi
  • 380 g green-skinned apples (e.g. Granny Smith)
  • 2-3 TABLESPOONS Lemon juice
  • 100-150 g Feta cheese
  • 50-60 g Cranberries

Directions

    Peel and finely dice the shallot. Coarsely chop the walnut kernels. Mix vinegar, mustard, honey, shallots, 1/2 teaspoon salt and a little pepper well. Finally, fold in the oil.

    Sort the salad, wash briefly and spin dry. Clean and peel the kohlrabi. Wash apples and dab dry. First cut the kohlrabi, then the apples into fine strips with a spiral slicer. Immediately sprinkle the apple strips with lemon juice and carefully turn them in.

    Add kohlrabi and about 2/3 of the vinaigrette and mix everything carefully. Fold the rest of the vinaigrette into the Babyleaf salad mix. Arrange the salad on 4 plates. Crumble the feta cheese and sprinkle over the salad together with walnuts and cranberries.
