  • 1 piece(s) (approx. 2 kg) released Kasselerrücken
  • 3 TABLESPOONS Spit roast spice
  • 4 TABLESPOONS Mustard
  • 1 1/2 kg High rib
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Aluminium foil

Directions

    Rub the Kasseler successively first with spit-roast spice, then with mustard all around

    Dab high rib dry, season with salt and pepper

  3. 3

    Cook meat in a closed grill at indirect heat for about 2 hours

  4. 4

    Remove finished meat from the grill, cover with aluminium foil and leave to rest for approx. 5 minutes, then cut open

  5. 5

    Waiting time approx. 5 minutes
