Cut the pineapple into small pieces. Wash the leek and cut into rings. Fry both with cabbage in 1/2 teaspoon of oil, season. Add 5 tablespoons of water. Cover and stew for 10 minutes. Beat the smoked pork flat. Brush with mustard.
Pluck the parsley and place it on top. Fold the meat over, pin it down. Fry in 1/2 teaspoon oil on each side for 4 minutes. Bring 9 tablespoons of water to the boil, stir in the purée. Season meat with pepper, take out. Dissolve roast with 5 tablespoons of water, add to the cabbage.
