Kasseler in a bed of vegetables

Ingredients

Servings: 4
  • 1 kg tripped chop of Kasseler
  • 7-10 Tbsp white pepper, salt
  • 750 g Broccoli
  • 250 g Mushrooms
  • 1 TABLESPOON + 40 g butter/margarine
  • 2-3 TABLESPOONS medium hot mustard
  • 1 TABLESPOON Apricot Jam
  • 2 (40 g) go. Tbsp. flour
  • 100 g Whipped cream

Directions

    Wash the Kasseler, dab dry and rub with pepper. Roast on the fat pan in a preheated oven (electric cooker: 200 °C/recirculating air: 175 °C/gas: level 3) for approx. 1 hour

    Clean and wash broccoli and cut into florets. Cook for about 8 minutes in about 1/2 l boiling salted water. Pour off, catching the vegetable stock

    In the meantime clean, wash and halve the mushrooms. Fry them in 1 tbsp. hot fat for about 8 minutes. Season with salt and pepper. Add broccoli and heat up

    Stir 1 tablespoon of mustard and jam until smooth. Roast ca

    Brush with it 10 minutes before end of cooking time

    Heat 40 g fat. Sweat flour in it. Add vegetable stock and cream while stirring. Bring to the boil and simmer for 2-3 minutes. Season sauce with 1-2 tbsp. mustard, salt and pepper. Arrange the smoked pork loin with vegetables and sauce on a plate. Serve with boiled potatoes or croquettes
