Kale with Kasseler and Kohlwurst

Ingredients

  • 1.5 kg cleaned kale
  • 2 Onions
  • 30 g Lard
  • 1/2 l Vegetable broth (instant)
  • 500 g detached pork chop
  • 750 g small waxy potatoes
  • 4 Cabbage sausages
  • 2 TABLESPOONS clarified butter
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Sugar
  • 7-10 Tbsp Allspice

Directions

    Wash the kale and blanch briefly in boiling water in portions. Pour the cabbage onto a sieve, let it cool down a bit and chop it roughly. Peel and chop onions. Heat lard in a pot.

    Brown the onions in it. Bring cabbage and stock to the boil. Add the smoked pork and braise for about 1 hour. Meanwhile wash the potatoes and cook in boiling water for about 20 minutes. Add cooked sausages to the kale about 20 minutes before the end of the cooking time.

    Drain the potatoes, rinse and peel them. Heat clarified butter in a pan. Fry the potatoes in it, turning them golden brown, season with salt and pepper. Sprinkle sugar over them and let them caramelize.

    Remove the smoked pork from the kale and cut into slices. Season the kale with salt and pimento, arrange on plates with meat, cooked sausage and potatoes. Mustard tastes good with it.
