Wash the raisins, drain and mix with rum. Separate eggs. Whip egg yolks, sugar, milk and salt until creamy. Gradually stir in flour. Beat the egg white until stiff and carefully fold into the egg mixture with the raisins.
Heat 1 tablespoon of fat in a large frying pan. Add 1/4 of the dough and fry over medium heat on both sides until golden brown. Cut Kaiserschmarrn into large pieces with the help of 2 forks and keep warm.
Bake the rest of the dough in the same way. Sprinkle Kaiserschmarrn with cinnamon and sugar. Decorate with mint. Applesauce tastes good with it.
