Wash, peel and quarter apples, cut out the core. Dice apples. Put apples, juice, lemon juice, 50 g sugar, 1 packet vanillin sugar and cinnamon in a pot, bring to the boil, cover and simmer over low heat for about 5 minutes.
Pour into a bowl and allow to cool. Melt butter in a small saucepan (must not be too hot). Sieve the flour into a bowl. Separate the eggs. Mix flour, egg yolk, 50 g sugar, 1 packet vanillin sugar, salt and milk well.
Stir in melted butter and raisins. Beat the egg whites until stiff and fold into the dough in portions. Heat the clarified butter in portions in a coated pan. Put the dough into the pan in 4 portions one after the other and bake on both sides until golden brown.
Use two forks to cut into pieces and let them falter for a short time. Keep warm. Dust with icing sugar. Serve decorated with flaked almonds and mint. Add stewed apples garnished with apple slices in a small bowl.
