Roughly grate the gouda. Wash the chives, dab dry and cut into small rolls. Whisk eggs and milk. Add cheese and chives, except for a tablespoon. Season with salt and pepper. Cut bacon slices in half and fry them crisply in a pan without fat.
Remove from the pan. Pour egg milk into the pan and let it simmer at medium heat. Push them together several times with a spatula. Arrange the bacon on the scrambled eggs and sprinkle with the remaining chives. Serve with buttered wholemeal bread and salad
